Frozen Chicken Leg Quarter Wholesale: A Buyer's Guide

By Elaff Trade Co.Published 6 min read

Frozen chicken leg quarter wholesale means buying the thigh and drumstick as one bone-in piece, packed in cartons and shipped frozen by the container. Before you order, confirm the cut, piece weight, freezing method, halal certificate, packing and storage temperature.

What is a chicken leg quarter?

A chicken leg quarter is the whole leg of the bird: the thigh and the drumstick, still joined, with the bone in. It is usually sold skin-on, and the back portion may be attached or trimmed off depending on the specification. Because it comes from the leg, the meat is dark and juicy and holds up well to grilling, frying, roasting and slow cooking. That is why caterers, restaurants, food processors and retailers buy it in large volumes.

Buyers often ask for related cuts at the same time, such as drumsticks, boneless breast and whole chickens for grilling.

Specifications to agree before you order

Two suppliers can both say "frozen chicken leg quarter" and ship different products. Write the following into your inquiry and your purchase order:

  • Cut: leg quarter with or without the back portion, skin-on.
  • Piece weight: the range per piece you need, so every carton matches.
  • Freezing method: IQF or block frozen, explained below.
  • Packing: net weight per carton, loose pack or inner bags, and the language on the label.
  • Dates: production date and expiry date, and the minimum shelf life you will accept on arrival.
  • Origin and plant: the country and the processing plant, because many importing countries accept meat only from approved plants.
  • Certificates: halal, health certificate and certificate of origin.
  • Temperature: stored and shipped at -18 °C or colder.

IQF or block frozen?

IQF stands for individually quick frozen. Each leg quarter is frozen separately, so the pieces do not stick together. You open a carton, take the number of pieces you need and return the rest to the freezer. IQF suits restaurants, retailers and anyone who portions the meat.

Block frozen means the pieces are frozen together in a block. It is simpler to pack and is common with processors who thaw and use whole cartons at a time. If you resell in small quantities or deliver to many customers, IQF is usually the better fit. Our Frozen Chicken Leg Quarter listing is IQF with bulk packing.

Halal chicken

If you sell to Muslim consumers, or to hotels, caterers and retailers in the Gulf and other Muslim-majority markets, halal certification is not optional. The certificate should come from a certification body your country accepts, and it should match the plant and the batch you are buying. Our product pages list Halal certification, and for export orders we offer Halal and HACCP certification support. Our guide to halal and HACCP certification lists the questions to ask any supplier.

Packing, storage and shipping

Frozen chicken travels in refrigerated containers, called reefers, set to -18 °C or colder. The cold chain must not break: the meat should be frozen solid before loading, the container pre-cooled, and the temperature recorded during the voyage. Our guide to shipping frozen food internationally covers each step.

Chicken is normally traded by the carton and by the container, so ask for the carton weight, the cartons per pallet and the cartons per container before you compare quotes. Then choose a trade term that matches the work you want to do yourself. Our guide to EXW, FOB and CNF explains the differences.

Documents you will need

Requirements differ by country, so confirm them with your customs broker before you order. These are the papers importers most often need for frozen poultry:

Document What it shows
Commercial invoice What was sold, at what price and on what terms
Packing list The cartons, weights and pallets in the shipment
Bill of lading The contract of carriage and proof that the cargo was shipped
Health certificate The meat was inspected and is fit for human consumption
Certificate of origin The country where the goods were produced
Halal certificate The product meets halal requirements

Checking the shipment when it arrives

Inspect the delivery before you sign it off, and note any problem in writing on the delivery document the same day:

  1. Temperature: read the container's temperature record and check the core temperature of a few cartons. The meat should be hard frozen.
  2. Cartons: look for crushed, wet or torn cartons, which can point to thawing or rough handling.
  3. Product: open a few cartons. Large ice crystals, a pool of frozen liquid at the bottom, grey or dried-out patches (freezer burn) or a sour smell are warning signs.
  4. Labels and dates: match the production date, expiry date, plant number and halal mark with your purchase order and certificates.
  5. Weights: weigh a sample of cartons against the net weight in the specification.

Keep photographs and the temperature record. If a claim is needed, they are your evidence.
